
Soy milk is a good milk substitute especially for those who are lactose intolerant. However, since it has little saturated fat, cooking with soy milk can be a little difficult than when handling ordinary milk.
Soy milk tastes different from cow’s milk. Make sure that when you use it, you wait until the end of the cooking process. Add it little by little to slowly incorporate the soy milk so that its taste would blend in well.
Soy milk is also easy to burn. Make sure that you constantly stir it if you are heating it. Always turn the flame to low.
Don’t stock up on soy milk. Best time to buy soy milk is about 48 hours prior to using it.
Add a bit of fat such as butter to dishes that call for whole milk.
