Basic Marinade
For barbecue afficionados, here’s a great and simple marinade to add flavor to chicken, fish, and shrimp before grilling.
These ingredients will make a marinade for up to 2 pounds of meat. Once used on raw meat, discard. Do not recycle.
- 8 cloves of minced garlic
- 1/2 cup of chopped fresh herbs
- 1 cup olive oil
- 1 tablespoon roughly ground black pepper
- 1 teaspoon red pepper flakes
Get a mixing bowl and put in the minced garlic.Rinse the herbs in cold water. You can choose an assorted mix of herbs such as parsley, thyme, oregano, and marjoram. Dry them carefully with clean paper towels. Chop the herbs into fine pieces and place them in the bowl with the garlic. Add the rest of the ingredients and mix well.
Prepare the meat and put them in a sealable plastic bag or container. Pour the marinade over the meat and mix everything together, making sure the meat is thoroughly coated. Leave in the refrigerator from a couple of hours and for up to two days. This will help the meat absorb the flavors. When the meat is ready to cook, grill or sautee.
You can make this marinade in advance. Store them in clean jars or bottles.
