How to Make a Basic Vinaigrette

Making Vinaigrette
Want a simple-to-prepare salad dressing that you can make at the last minute at home? Here is your basic vinaigrette recipe:
A vinaigrette doesn’t have to be used exclusvely as a salad dressing. It can also be used as a sauce for meat, fish, and poultry dishes. It uses acids for its base. The most common of which is balsamic vinegar. However, you can also use other vinegars, citrus juice such as lemon or lime, and even wine
such as champagne.
For the basic vinaigrette, all you will need are:
1 tablespoon of Dijon mustard
1/4 cup of balsamic vinegar
3/4 cup of olive oil
salt and pepper to taste
This recipe make 1 to 1 and 1/4 cups.
Take the mustard and vinegar together and whisk them in a medium bowl. Season with salt and pepper.
Continue whisking. While doing so, drizzle in the olive oil in a steady stream. When half of the oil has been incorporated, taste. Add more salt and pepper if necessary.
Keep whisking until the vinaigrette loses it’s sourness. It’s done when it gets a smooth and tart taste.
