How to Save Leftover Meat

Running out of ideas on how to transform leftover meat into something more than edible? Here are some tips on how to do exactly that:
Beef
- Chop or shred leftover roast beef for soups, hash, potpies, curries, and other casseroles.
- Slice thinly to include in salads.
- Finely chopped beef can be added to tomato sauce to be served over pasta.
Lamb
- Chopped lamb is good for shepherd’s pie and curry dishes.
- You can also substitute lamb as a stuffing for peppers and other stuffed vegetable dishes.
Pork
- Thinly sliced pork makes good sandwiches.
- It can also be used for sweet-and-sour dishes.
- Ham adds flavor to omelettes.
- Ground ham can and can be made into a ham loaf by mixing it with bread crumbs, a lightly beaten egg, and some seasonings.
Chicken
- Diced chicken breast fillets for salads and chicken a la king.
- Shredded chicken plus mayonnaise and sweet relish makes for a good chicken sandwich!
- You may also boil them for stock or add to soups.
Fish and Shellfish
- Combine fish and shellfish with white sauce and pour over steaming pasta.
- Tuna can be used for sandwich spreads.
